Potato, Chicken, Bacon, and a Dollop of Sour Cream

20150912_194926 20150912_194744Anyone love a loaded bake potato? I decide to take the loaded bake potato a different route this time in my kitchen. I wanted to make a casserole style loaded bake potato.

Ingredients:

5 medium to large red potato, cut the potato about 1in

4 – 5 chicken breast, cut into  1in

5-6 Applegate Bacon, after it’s cook cut into small pieces. You should have a least 3/4  cup of bacon. If there’s extra snack on it before someone else does or just through into your cooking.

1 cup of cheese, divided

sour cream (optional)

Seasoning: combine together

2 tablespoon olive oil

1/2 tables spoon paprika

1 tablespoon garlic powder

1/2 tablespoon onion powder

1 teaspoon sea salt

1 teaspoon freahly ground black pepper

First thing first, setup your prep section with all your ingredients you will need.  This will keep you from running back and fourth. Before beginning to put your ingredients together set the oven at 400 degrees.  While the oven is in the process of heating up, in your 8 x 11.5 x 2in baking dish you will put in the potato and chicken. You will massage your mix seasoning and 1/2 cup of cheese onto the potato and chicken Make sure to speak sweet things during this process. Once you’ve evenly coat your potato and chicken, place it in the oven for 60 minutes.

After your timer goes off, mix in the bacon and sprinkle the remaining 1/2 cup of cheese on top. Place the baking dish back in the oven for at least 5 minutes, or until the cheese has melted completely.

Serve it up with a dollop of sour cream.
